• 1 1/2 Lb Texas Cajun Crawfish Sausage, diced
• 3 - 4 Cups Beef broth
• 28 oz. Can Italian plum tomatoes, crushed in puree
• 1 Onion, chopped
• 1 Large carrot, chopped
• 1 Pkg. Frozen spinach, thawed
• 1/2 Tsp Garlic powder
• Salt and pepper to taste
• 1 Pkg. Cheese tortellini, fresh or frozen

Cooking Instructions:

In a stockpot combine all ingredients except for the tortellini and simmer for 45 minutes.  Add tortellini and cook for the length of time as directed on the package.

Let stand for 10 minutes and serve.

Makes 6 servings.
