• 1 Lb Texas Cajun Crawfish Sausage, diced
• 1 Large Bunch green onions, finely chopped
• 1 Med. Green bell pepper, chopped
• 1 Cup Frozen hash brown potatoes, thawed
• 4 Eggs
• 1/4 Cup Water
• 2 Jalapeno peppers, chopped
• 1/4 Cup Parmesan cheese
• 12 Tortillas
• 1/4 Tsp Red pepper

Cooking Instructions:

Beat the eggs and water together.  Brown sausage, onion and bell pepper; drain.  Add eggs and hash browns; stir 1 to 2 minutes or until potatoes are hot.   Add Parmesan cheese and stir until melted and eggs are cooked.

Place on a warm tortilla with lettuce, picante sauce and Cheddar Cheese.   Roll up.

Makes about 12 roll ups.
