Sausage Stuffed Bell Peppers

Ingredients:

For Stuffing:

  • 1/2 Cup Butter
  • 2 Small red onions, chopped
  • 2 Garlic cloves
  • 3/4 Lb. Texas Cajun Crawfish Sausage, diced
  • 4 Oz Cooked bulgur
  • 1 Tbs Chopped parsley
  • 10 Cherry tomatoes, quartered
  • Salt and Pepper, to taste

For Bell Peppers:

  • 4 Medium-size red bell peppers
  • Olive oil

Cooking Instructions:

FOR STUFFING:

Melt butter in a frying-pan and add onions and garlic.  Fry gently until onions begin to brown. Add sausage meat and fry gently for 5 minutes.  In a bowl, mix together bulgur, parsley and tomatoes.

Add sausage meat mixture; season with salt and pepper.

FOR BELL PEPPERS:

Preheat oven to 375 degrees. Halve bell peppers and discard seeds.  Fill the peppers with stuffing and place in a shallow baking dish.  Drizzle with a little olive oil and bake for 30 minutes.

Makes 4 servings.
