Crawfish Sausage Hash

Ingredients:
  • 2 Lb Red potatoes, cut into ½ inch dice
  • 1 Large Onion, chopped into ¼ inch pieces
  • 1/2 Stick unsalted butter
  • 3 Links Texas Cajun Crawfish Sausage, diced
  • 1/2 Cup Red bell pepper, diced
  • 1/2 Cup Green bell pepper, diced
  • 1/4 Tsp Salt
  • 1/2 Tsp Black pepper
  • 1/4 Tsp Cayenne pepper
  • Salt and pepper to taste
  • 1/4 Cup Finely chopped green onions

Cooking Instructions:

In a heavy large frying pan, sauté the potatoes and onions in the butter over medium heat for 15 minutes, stirring occasionally. Add the sausage, bell peppers, salt, black pepper, and cayenne, and continue frying until the sausage is browned, about 5 minutes. Add salt and pepper to taste and serve garnished with green onions.

Makes 4 servings.
