Crawfish Sausage and Rice

Ingredients:
  • 1 Lb Texas Cajun Crawfish Sausage, sliced
  • 1 1/2 Cups Long-grain converted rice
  • 2 3/4 Cups Water, hot
  • 3 Cubes Chicken bouillon granules
  • 16 oz. Can Tomatoes, diced with juice
  • 3 Tbs Tomato paste
  • 2 Stalks Celery, chopped
  • 1 Bunch green onions, chopped
  • 1 Large green pepper, chopped
  • 1 Small zucchini, chopped
  • Salt and pepper to taste

Cooking Instructions:

Combine all ingredients in a crock-pot and mix well.  Cover and cook on low for 4 to 5 hours.  Check rice to make sure it does not get mushy.

Makes 6 servings
