Crawfish Sausage Noodle Casserole

Ingredients:

  • 12 oz. Package Rotini Noodles
  • 1 Tbs. Butter
  • 3 Links Texas Cajun Crawfish Sausage, Diced
  • 1 Medium White Onion, Chopped
  • 4 oz. Can Green Chilies, Chopped
  • 1 Cup Milk
  • Salt & Pepper To Taste
  • 2 Cups Monterrey Jack Cheese, Shredded
  • 6 Tomato Slices

Cooking Instructions:

Boil rotini noodles as directed on package then drain and rinse with cold water.

As noodles are cooking, melt butter in a large saute pan on medium-high heat. When the butter is melted add the diced sausage and onions. Cook until the sausage is browned but don't drain the drippings.

Stir in the cooked pasta, chilies, milk, salt and pepper.

Pour half of the mixture into a greased 2 1/2 quart casserole pan and sprinkle with half of the cheese. Add the remaining mixture, and arrange the tomato slices on top. Sprinkle the top with the remaining cheese.

Up to this step can be prepared one day in advance if kept covered in the refrigerator.

Bake, uncovered, in a 350 degree oven for 25-35 minutes or until top is slightly browned.

Makes 6 to 8 servings
