Fresh Corn And Sausage Fritters

Ingredients:
  • 1 Cup All-purpose Flour, sifted
  • 1 Tsp Baking Powder
  • 1 Tsp Salt
  • 1/8 Tsp Pepper
  • 1/4 Tsp Paprika
  • 1 Cup Texas Cajun Crawfish Sausage, cooked and diced
  • 1 Cup Fresh Corn off the cob
  • 2 Egg Yolks, beaten
  • 2 Tbs Milk
  • 2 Egg Whites, beaten stiff
  • Oil, for frying

Cooking Instructions:

Sift flour, baking powder, and spices together in a mixing bowl.

Add sausage, corn, egg yolks, and milk; mix until blended.

Fold in stiffly beaten egg whites.

Drop by heaping teaspoonfuls into oil heated to 360 - 365 degrees. 

Cook 3 to 5 minutes, turning to brown on all sides.  Drain on paper towels.

Makes about 24 fritters
